Jozen Mizunogotoshi ("Pure Flower") sake is rich and flavorful. Crystal clear and with very thick legs, Jozen Mizunogotoshi's nose is sweet and elegant with notes of lemongrass, grapes, bubblegum and a pleasant spring floral freshness. The flavor is light with some earthy rice notes but moreover a subtle alcohol, tons of umami and a very crisp and clean with a light bitter snap in the tail. The finish is clean and bright with melon notes. This is a very fine and beautiful sake with a light punctuation of alcohol that is neither intrusive nor unwelcome.
Established in 1855, Shirataki started as a Japanese-style bar along a snow-deep road before its metamorphosis into one of Japan's best breweries. The product brand "Jozen Mizunogotoshi" means "Flowing water should always be pure and clean; in other words, superlative goodness is like water, and life should be pure and clean as well."
